This past week was my roommate Daisy’s 20th birthday and I made her an awesome gluten free chocolate cake. However, this wasn’t any boring chocolate cake it was a cloud cake. Cloud cake is an awesome version of chocolate caramel poke cake that my mom would make growing up. Once the chocolate cake comes our of the oven, you poke holes in it and pour a cup of caramel sauce on top, then when the cake cools you top with cool whip and skor bits. This was one of Daisy’s and I favourite cake growing up and it is just as good gluten free! Keep reading for the full recipe!

Cloud Cake Recipe

For the Cake

  • 2 1/4 cups gluten free flour blend with xanthan gum (I use Bob Red Mill One to One baking flour)
  • 1 1/2 cup cocoa powder
  • 2 1/4 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1 1/2 cup butter
  • 1 cup brown sugar
  • 1 1/4 cup granulated sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 1 1/2 cup milk
  • 1 1/2 cup plain greek yogurt

For Caramel Sauce

  • 1 cup butter
  • 2 cups brown sugar
  • 1/2 cup milk
  • 2 teaspoons vanilla
  • 1 can condensed milk

Icing

  • 1 container of cool whip topping
  • 1/2 skor bits
  1. Preheat oven to 350 degrees and grease a 9×13″ pan.
  2. In a medium bowl, mix the four, baking soda, baking powder, and cocoa powder together
  3. In a large bowl, beat butter and sugars until light and fluffy.
  4. Add vanilla and eggs to butter mixture.
  5. Add milk to butter mixture (at this point the batter will look almost curdled)
  6. Add flour mixture and yogurt alternating between, starting with flour.
  7. Pour cake batter into prepared pan and cook for about 45 minutes or until the cake springs back when touched.
  8. While cake is cooking, make the caramel sauce.
  9. Add all ingredients into a saucepan and bring to a gentle boil for 3-4 minutes, until it starts to thicken.
  10. Once cake is done, remove from oven and let sit for 5 minutes. Then poke holes all throughout the cake and pour in caramel sauce and can of condensed milk.
  11. Let cake cool completely before topping with cool whip and skor bits.

Overall, this cake is a big hit with gluten free and non-gluten people alike, no one can ever tell that this is a gluten free cake. It is so moist, due to the caramel that it melts in your mouth. I highly recommend this cake for your next birthday!
