This week I decided to try asking chat for a gluten free cookie recipe. I gave it the prompt of “can you please give me a gluten free sugar cookie recipe that is made with gluten free bob red mill 1 to 1 baking flour.” Then I further refined the search by telling it that I did not have shortening or almond flour. It quickly gave me a new recipe with different ingredients that I did have at home. I had really high hopes for this recipe, as it would be a great tool to ask for recipes or to ask for substitutions if you don’t have all the ingredients. However, I was slightly disappointed in the recipe that it gave me, and my cookies turned out tasting okay, but they did spread out a lot, to the point that I recut out the shapes once they came out of the oven. I think that chat might still need to be developed a little but further to be able to give recipes that will be successful. I have included the recipe below if you want to try it out for yourself. Recipe

  • 2/3 cup butter
  • 2/3 cup sugar
  • 1 tsp. Vanilla
  • 1 egg
  • 2 cups gluten free flour
  • 1 1/2 tsp. baking powder

Directions

  • Preheat oven to 375
  • Cream the sugar and egg together, than add the egg and vanilla.
  • In another bowl mix flour and baking powder.
  • Mix together the wet mixture and the flour mixture.
  • Roll dough out to 1/4 inch thick and cut out shapes.
  • Bake for 6-7 minutes.
  • Let cool and frost with your favorite icing.
